“Show the Love” Salad (By Jo & Sue)

Here is a cute last minute idea to fancy up your Valentine’s lunch or dinner. Or, if you are anti-Valentine’s day, then it’s a cute way to show your love to those around you – no special day required! You can make your favorite salad or follow our ingredients, either way all you really need is a tiny cookie cutter and you are good to go. Not that I won’t also be enjoying plenty of Valentine’s sweet treats, but at least now I can counter balance with a little healthy too!

Ingredients

1 large cucumber, sliced
2 red peppers, seeded (tops and bottoms removed)
1 bunch radishes, sliced
1 small brick of partly skim mozzarella cheese
10 – 15 small plum tomatoes, halved
1/4 to 1/2 pkg Grab & Go Simply Sesame Trail Mix

1 bottle Kraft Roasted Red Pepper with Parmesan salad dressing

Instructions

Place the Spring Mix in a large bowl. (If you can’t find the Earthbound Farms Spring Mix just use a similar mixed greens blend, about 6 cups or more.)
Using a small, heart shaped cookie cutter (about 1 inch) cut out heart shapes from the cucumber, red peppers, and mozza cheese.

Sprinkle the veggies and cheese over the salad.
Sprinkle with a generous amount of the Simply Sesame Trail Mix. (If you can’t find this you can leave it off or substitute with another crunchy salad topper.)
Just before serving, drizzle with your desired amount of Roasted Red Pepper Dressing and toss until equally distributed.

FROZEN STRAWBERRIES & YOGURT (BY LIVING RICH WITH COUPONS)

I saw this adorable snack and thought it was perfect for this time of year with Valentine’s Day right around the corner. It is super easy to make and is a very healthy snack – especially with all of the yogurt deals we get great deals on! These are the perfect after school snack!

Ingredients:

  • Strawberries
  • Yogurt (Greek/flavored anything you would like)
  • Freezer

Directions:

  • Optional: Cut the strawberries in half
  • Dip the Strawberries in yogurt
  • Put them in the freezer
  • Enjoy!

Loaded Bakes Omelette Muffins (By Skinny Taste)

These easy, mini baked omelets are perfect to make ahead for the week. These muffins are inspired by my recent vacation to Beaches in Ochos Rios Jamaica. Every morning I would get an omelet with fresh fruit. The chef at the omelet station had all his ingredients prepped and quickly whipped up hundreds of omelets each morning to order. I used some of my favorite omelet ingredients but you can switch it up and add whatever you like or have on hand.

Ingredients:

  • nonstick cooking spray
  • 9 large whole eggs
  • 1/4 teaspoon kosher salt
  • black pepper
  • 3 strips cooked chopped bacon
  • 3 tablespoons thawed frozen spinach, drained
  • 3 tbsp diced tomatoes
  • 3 tbsp diced onion
  • 3 tbsp diced bell pepper
  • 2 oz shredded cheddar

Directions: 

  1. Preheat the oven to 350F. Spray the muffin tins with cooking spray.
  2. In a large bowl whisk the eggs, season with salt and pepper.
  3. Mix in the remaining ingredients.
  4. Fill  and place tins on a cookie sheet and bake 20 to 25 minutes, until set

Heart Quesadillas (By Smart School House)

Quesadillas are a go-to snack for our kids. They are quick to make and fill up their little tummies so they can continue to play. Anytime we can make our favorite food more fun, we go for it!
To make heart shaped quesadillas, you will need:

  • Flour tortillas
  • Shredded Cheese
  • Heart shaped cookie cutters

Directions for Heart Quesadillas:

  1. Use a large heart cookie cutter to create heart shaped tortillas (kids are really good at doing this!)
  2. Sprinkle cheese on one tortilla. Keep the cheese toward the center because it will melt outwards.
  3. Put a second heart tortilla on top.
  4. Cook over medium heat for 1-2 minutes on each side (or until it turns brown as seen in the video).
  5. Serve warm!

Mini Caprese Skewers (By Skinny Taste)

Grape tomatoes and mini mozzarella balls layered on a stick. If you cut the tomatoes in half diagonally they look like small hearts. For older kids add basil in between the tomatoes and pack a small container of balsamic vinaigrette.
