Summer Vegetable Slaw

Slaw 

½ green cabbage

½ red/purple cabbage

2 medium carrots

1 red pepper

1 bunch cilantro

½ cup cashews  

Dressing

½ tsp sesame oil

½ cup rice vinegar

salt and pepper to taste

  

Shred the cabbage and carrots and place in a bowl. Thinly slice the pepper, chop the cilantro, and add both to the cabbage mixture. Mix dressing separately, then mix into the salad and top with cashews. Best if left to marinate for about 15 minutes before serving.

You can add anything you like to this, like sliced red onion, mango, snow peas, etc.

** As a major timesaver, buy the cabbage and carrot mixture already shredded.
